Coming from the small town on Italy’s Ligurian Coast called Recco, Focaccia di Recco is a rare type of focaccia that is sold on the streets and restaurants.

Unlike the regular focaccia bread, Di Recco is a standalone dish with crispy and thin texture with a bubbly, cheesy interior.

From master to apprentice.

Legendary Chef Nancy Silverton first introduced this rare, comfy dish to Los Angeles food enthusiasts at her restaurant Chi Spacca. Her apprentice Chef Cihan Kaymakcalan has gone on to create Glad and further evolved the recipe adding fillings and fresh toppings, and turned it into an unexpected fusion of traditional Italian and Eastern European cuisines.
